About St Imre
With St Imre being the only vineyard established in the Far South region in Tasmania, you can be sure of a unique character and flavour from their wines. The vineyard enjoys a climate that brings cooling sea breezes and crystal water springs to irrigate the vines together with plenty of fruit ripening sunshine and a nurturing soil. Taken all together, the resulting wines are worthy of a wider audience. St Imre successfully captures the essence of Far South Tasmania. The wine making process starts with the belief that minimal intervention in the growth of the fruit will produce the best results. The resultant fruit is hand picked and selected for crushing and de-stemming and then inoculated with carefully selected noble yeast strains. The red are fermented in open wooden vats, the whites in glass, stainless steel or plastic. No filtering or fining is performed. Little or preservatives are used and the end result is a strong fruity character. You would do well to order from this interesting range of wines.
