Winemakers Comments and Tasting Notes
Made from our estate grown Cabernet Sauvignon fruit which was harvested on 5/3/07. The grapes were crushed and held on skins for 2 days to achieve optimal juice colour. Delicate handling under cold conditions was employed throughout the entire winemaking process. Fermentation was arrested at a a residual sugar level of 11.4gm/litre and the wine held at 1-3°C prior to bottling on 29/05/07. Minimum sulphites were added as preservative. The alc/vol is 12.5% Total production: 690 cases.
Winemakers Notes
This rosé is vibrant crimson in colour with fragrant summer berry aromas, rich raspberry, strawberry and cherry flavours with leafy notes. The wine has a delicious and lingering finish. Subtle, attractive residual sugar is balanced by crisp, fresh acid. Best served slightly chilled.
