Dolcetto - Australian rare wine
This varietal is an early ripening, low-acid red grape variety that generally poduces wines that are soft, round, fruity, and fragrant, with flavors of licorice, almonds, and plums. Generally made to drink young, Dolcetto can often provide good quality, deep ruby and purple colored wines that are very reasonably priced.
Gabrielle Dolcetto (2006) - The 2006 season saw the Dolcetto grapes flourish at Catherine Vale and the vintage proved outstanding. Grenache - Australian rare wine
Grenache (pronounced gren-ash) is probably the most widely planted variety of red wine grape in the world. It ripens late, so needs hot, dry conditions such as those found in Spain and in the south of France. It is generally spicy, berry-flavoured and soft on the palate with a relatively high alcohol content, but it needs careful control of yields for best results. It tends to lack acid, tannin and colour, and is usually blended with other varieties such as Syrah, Carignan and Cinsaut.

Nebbiolo generally makes powerful and intense wines, although generally with medium body and color. These wines are high in tannins and acids, they often need several years of bottle age before they are ready to drink. They often have aromas and flavors of raspberries, plums, earth, roses, and tar.
Parish Hill Nebbiolo (2004) - Medium bodied red wine with fine mouth filling tannins and long lasting flavours of chocolate cherry liqueur, plum and liquorice enhanced by an aroma of rose petals as the wine undergoes its journey in the glass. Parish Hill Wines
produce premium Australian wines from Italian vines grown in the vineyard at Uraidla in the Adelaide Hills, South Australia. They are licensed to crush 15 tonnes of grapes each vintage, so have only small quantities of each of their unique wines. All wines have screw caps for longer freshness.This variety of rare red wines is really interesting, but this is what marks our boutique wineries here in Australia.
